キャベツとベーコンのペペロンチーノ

無性にこれが食べたくなる時があります。キャベツのおいしさを引き出す料理、伝授します。

主な食材はキャベツとベーコンだけ。手軽でいて、ザク切りしたキャベツの存在感を主張する、まさしく男の料理です。味付けはニンニクと唐辛子による、お馴染みのペペロンチーノ。イタリアを発祥とするその風味と純米酒の組み合わせは、本家のワイン以上となるコンビネーションを見せてくれます。

材料・2人分

キャベツ 半玉
ベーコン 100g
ニンニク 1片
唐辛子 2本
白ワイン 50ml
オリーブオイル 大さじ1杯
塩・コショウ 適量

キャベツは放射状に1/4にカット。その時、芯を残してカットすれば葉がバラバラにならない。厚手の鍋にオリーブオイルをひき、ニンニク（潰しておく）と唐辛子、ベーコンを入れ弱火で火にかける。

香りが出てきたらキャベツを入れ、白ワインを加え塩とコショウをふり、蓋をし弱火で蒸し焼く。約5分後、焼き色が着いたら裏返し約5分。鍋底のニンニクや唐辛子をキャベツの上にちらし、両面に焼き色がついたら完成。

 キャベツは1/8と大きいサイズのため、ベーコンも比較的大きめにカットした方がバランスがいい。

ソーヴィニヨン・ブラン

トロピカルフルーツの風味も心地よい、 日本ならではソーヴィニヨン・ブランの味わいを目指して。
日本の白ワイン用品種で、最も栽培面積が大きいのはシャルドネですが、ここ数年、にわかに増加の兆しが見えてきたのがソーヴィニヨン・ブランという品種。フランスのロワール地方やニュージーランドのマールボローという産地が知られており、グレープフルーツのような柑橘系の香りが特徴とされています。特にマールボローの産地のものは、香りがとりわけ豊かであふれんばかり。さらに青い草のようなニュアンスも感じられます。

日本では長年、この香りを出そうとすることにこだわるつくり手が多かったように思います。ソーヴィニヨン・ブランは、熟しすぎると香りが弱くなる傾向があるのですが、日本のソーヴィニヨン・ブランの中には、香りのピークに合わせて収穫することで、味わいがやや痩せてしまうことがありました。しかし、日本ならではのソーヴィニヨン・ブランの味わいがあってもいいと、私は思っています。
そんな風味を感じさせてくれたのが、山形県上山（かみのやま）市にあるワイナリー、ウッディ・ファームでつくられたソーヴィニヨン・ブランでした。モモやトロピカルフルーツの風味が感じられ、草のようなニュアンスが口中でほんのりと出てきます。ほどよい果実の厚みにしっかりと酸が利いていて、きちんとメリハリもあります。なんと言っても飲んでいて心地よいのです。
つくり手の金原勇人さんによると、このワインはふたつの畑のブドウを使っているそうで、成熟が遅れているほうの畑に合わせ、粘って粘って収穫したとのこと。そのため、トロピカルなフルーツの香りが出てきたのかもしれません。今後は、「これぞウッディ・ファームと言えるような味わいを目指して行きたい」と話す金原さん。これからのウッディ・ファームの味わいが楽しみです！

ウッディ・ファームを立ち上げた木村家は、1952年から上山市で果樹栽培を手掛ける農家でした。ブドウだけでなく、サクランボ、西洋梨も手がけていましたが、果樹栽培を初めて2代目の木村義廣さんは、自ら育てたブドウでワインをつくりたいと願い、ワイナリーを立ち上げました。金原さんも上山市出身。地元のブドウ100％でワインをつくろうという目標に共感して、ワイナリーに入りました。
